Sourdough that proves patience still matters.
Small-batch sourdough, artisan pastries, and craft lagers — baked and brewed by hand every morning at our Marlborough kitchen on N Main Street.
Voted best local bakery in the greater Marlborough area.
A century of craft, one loaf at a time.
Shebeen Brewing Company began as a quiet experiment in a Marlborough kitchen — a desire to understand what happens when you give dough nothing but time, flour, water, and salt.
Today, our 72-hour cold-fermentation sourdough and small-batch lagers are baked and brewed right here on N Main Street. Every loaf carries the character of our wild starter, every batch of beer reflects the seasons we're in.
We partner with local Connecticut farms for our grains and hops, and we never rush a process that took generations to perfect.
Loaves with character.
Each sourdough is leavened with our 10-year-old wild starter, fermented for 72 hours, and baked in our deck oven until the crust sings.
Classic Country Loaf

Butter Croissant
24hSeven layers of French butter, laminated by hand every morning. Honeycomb interior, shattering crust.
Pain de Campagne

Brioche Rolls

Harvest Seeded Loaf
60hWhole wheat base topped with sunflower seeds, flax, and rolled oats. Nutty, hearty, and deeply satisfying.
Craft lagers that move slow.
Our brewing philosophy mirrors our baking — no shortcuts, no rush. Every batch is conditioned at cold temperatures for weeks, producing clean, crisp lagers with surprising depth.
Marlborough Pilsner
4.8% ABVCrisp, dry, and quietly complex. Czech Moravian hops meet a pale Munich base malt. Refreshing in every sense.
